ROASTED CARROTS with ORANGE/CINNAMON DRESSING

This is a delicious side dish or afternoon snack. Quick and easy - we highly recommend this is a way to enjoy some heart healthy mediterranean food. 

INGREDIENTS
1.5 Pounds of Carrots - peeled and quartered (Take a whole carrot. Cut it in half across the carrots width.  Then cut each half length wise, then cut down the length of each half again) .
3-4 Tablespoons of Olive Oil
1 Table spoon of Dark Brown Sugar
1 Teaspoon of pepper (You will use 1/2 teaspoon for the carrots and the other 1/2 teaspoon for the dressing)
1/4 - 1/2 cup of fresh cilantro. (Depends on your taste, we prefer 1/4 cup)
1/4 Cup of Orange Juice
1/4 Teaspoon of Ground Cumin
1/8 Teaspoon of Cinnamon

COOK

1. Preheat the oven to 450 F. Wash and Peel the carrots. Cut into quarters, lengthwise. 

2. In a mixing bowl add 3 tablespoons of Olive Oil (you can add more later if desired), Brown Sugar and Pepper. Mix together, adding extra olive oil as needed. 

3. Coat carrots in the olive oil and spice mix. Place on a foiled roasting pan and cover with foil. Place in oven at 450 F for 12 minutes

While that is roasting

4. In a mixing bowl add Pepper, Cumin, Cinnamon and Orange Juice. Mix together and let sit for flavors to blend. Chop 1/4 cup of Cilantro and set aside.

5. At the 12 minute mark, take Carrots out of oven and remove foil cover. Place Carrots back in oven and roast for another 8-10 minutes. 

6. Remove Carrots from oven, total cooking time of 20-22 minutes. Plate Carrots in a serving bowl. Pour Orange/Cinnamon dressing over Carrots, turning to mix and make sure all are covered. Garnish with Cilantro.
