GRILLED SWORDFISH STEAKS

Take to the grill this summer with Swordfish steaks.  A delicious way to #LiveHeartHealthy and cut back on red meat as part of The Mediterranean Diet. 

INGREDIENTS

Swordfish Steaks (2) - about 1 - 1.5 inches thick
Pepper
Extra Virgin Olive Oil (EVOO)

PREPARE

Place some olive oil on a paper towel and coat the grill with a layer of olive oil. Turn on the grill to high and let heat for about 10 minutes. Wash Swordfish Steaks and pat to dry. Cover both sides of the Swordfish steak with olive oil. Pepper the steaks on both sides, can also add additional spices like Garlic Salt, Oregano or Herbes de Provence.

GRILL

1. Grill Swordfish Steak for around 3 minutes per side over high heat. While they are grilling, turn down a side burner to medium high. 
2. After Grilling 3 minutes per side, transfer the Swordfish Steaks to medium high. Grill for an additional 2 minutes per side. 
3. Steaks have now grilled for a total of 10 minutes (5 minutes per side) remove from grill and let rest for 5 minutes. 

Great dish to serve up with a side salad, grilled lemons and Italian Salsa Verde to add additional flavor.
