Grilled Veggies 00
Summer is here. Well frankly, as long as there isn't rain, sleet or snow. There is no good excuse to not fire up the grill and enjoy delicious grilled vegetables. Two of my favorites to toss on the grill are Tomatoes and Zuchinii.
1. Halve tomoatoes and apply a light brushing of olive oil. Spice with pepper, garlic or herbs such as basil and rosemary for added flavor.
2. Quarter Zuchinii length wise. Brush with mixture of olive oil and spices of your choice.
#HeartHealthy TIP: Avoid Salt! It can lead to high blood pressure.
3. Toss veggies on a hot grill. You can't undercook them. So crisp to your desire. Remember - raw veggies are a great source of nutrients and fiber, so don't over cook them.
